Aramark took over food service operations in July 2017. We have prioritized responsible sourcing and waste minimization throughout our first 2 years as a means to provide more sustainable dining options to the UofSC community. We began sourcing and tracking local and TPV products; we initiated post-consumer compost collection in 7 locations; we implemented trayless dining and reusable dine-in & to-go options; we began purchasing produce from a local food hub to support small farmers. All of these efforts have been in alignment with the University's sustainable goals. We hope to institutionalize these changes through a Sustainable Dining Policy that is in progress.
