In our contract with Chartwells, the educational division of Compass Group Canada, there are multiple sustainability related KPIs embedded to ensure and promote sustainable practices in our food and beverage purchasing. The new ""YU Eats"" program brought many enhancements to our food services, such as: - Menu rotations that provide greater variety and a wider range of global fare that reflects the diversity of the York community. - Inclusion of progressive Indigenous cuisine in partnership with Chef Jenni Lessard, based in the Qu’Appelle Valley in Saskatchewan on Treaty Four Territory, and the homeland of the Métis. - A significant increase in the availability of nutritious plant-based meals. - Coffee from Birch Bark Coffee Co., a First Nations owned business that offers organic, Fair Trade and SPP-certified coffees. - Local sourcing, micro-farming, waste reduction and other sustainability and food security programs.

Data source(s) and notes about the submission:

York University in partnership with Planet Bean now  has Las Nubes Coffee, is a high-grown specialty coffee produced by a co-operative of small farms in areas adjacent to York University’s Las Nubes Rainforest in southern Costa Rica. It has been given certification of sustainability by the Ministry of Agriculture in Costa Rica based on the following criteria:

  • a fair and just price to local farmers;

  • sound ecological production and milling processes;

  • biodiversity protections;

  • investment in community development; and

  • ethical trade practices.

After nearly a decade, Las Nubes has made its way back to Canada and is available in select locations on York’s campuses, including Food Services Dinning Halls and Central Square. Part of the proceeds from the coffee will go towards supporting York’s Las Nubes Research and Conservation Program.
