From the catalog:
ID 345 - Food; What is the relationship between human beings and food? Through various disciplines we will explore the issues that surround food, its history, production, consumption, place in culture and religion, and symbolism.
This description can not be fulfilled without exploring the impact of our food sourcing on the environment. The class visits local farms, volunteers in the college garden and other local interests.

The dining services department promotes the use of locally sourced foods including a local farmer raising natural beef; purchasing local organic honey for recipe and customer use from a local bee farmer. Selecting food served in the most original form possible is regularly discussed with students as a way to make healthy dining choices—baked potatoes versus French fries for example.
