Continuing Education courses do include sustainability, including courses on range land and agricultural sustainability as well as methods for maintaining water quality and conserving water. However, ongoing education classes that are not for academic credit are loosely tracked. Therefore, identifying sustainability courses as a percentage of all extension courses is not possible. We were able to calculate the number of online extension classes that addressed sustainability.

Part 2. Sustainability-focused certificate program

Does the institution have at least one sustainability-focused certificate program through its continuing education or extension department?:
Yes

A brief description of the certificate program(s):
Utah Farm-Chef-Fork is a USDA Specialty Crop funded program, that is a collaboration between the USDA, Utah State University Extension Sustainability, and Slow Food Utah. The goal is to enhance community vitality and reduce food miles by connecting Utah producers and restaurants. Participants in Utah Farm-Chef-Fork farmer or chef/owner training learn benefits of locally sourced food as well as ways to overcome common barriers with sourcing locally. They also develop a local-sourcing game plan and receive an Utah State University accredited Utah Farm-Chef-Fork certification.

Extension also offers a Climate Change Science Essentials class, a series of master naturalist classes, and a series classes on sustainability in the outdoor industry.
