A brief description of the sustainability-focused immersive program(s) offered by the institution:
Studying the primary pillars of sustainability; economic development, environmental protection, and social change, the Honors College offers a ten-day immersion study abroad to Costa Rica. This study abroad program is part of a Fall 2023 Honors College course in Intentional and Sustainable Living. In this course, up to 20 students will combine ten days of living and working on a sustainable, organic and off-the-grid farm and yoga retreat in the Costa Rica rainforest in mid-August with four Saturday afternoons engaged in our San Antonio community during the Fall semester. The Costa Rica location is Rancho Margot: www.ranchomargot.com. Entirely off the grid, Rancho Margot Eco Lodge is nestled in between The Children’s Eternal Forest and Lake Arenal National Park and within the UNESCO Agua y Paz biosphere. The goal of the course is to immerse students in different approaches to living intentionally and sustainably in local and global communities. Each day will involve specific program activities on the ranch such as gardening, energy, and sustainable agriculture workshops, as well as discussions on overcoming design challenges.
