A brief description of the methodology used to track/inventory sustainable food and beverage purchases:
All purchases through our primary supplier are easily converted to a spreadsheet which our head office can then flag for sustainable, local, Fair Trade. When purchases are made outside of our primary supplier, it is somewhat more difficult to gather information quickly and comprehensively (as we typically are sent individual invoices), but many local suppliers are able to send annual purchasing reports.
