A brief description of the pre-consumer food waste composting program:
KU Dining researched composting programs in 2010 and implemented two pilot composting programs in their residential dining facilities starting in fall 2011. The first few months of operation have yielded significant results, diverting approximately 30 tons of pre- and post-consumer compostable materials from the landfill to a certified composting facility. Another unit partners with local farmers to donate per-consumer food waste to use as farm animal feed. Dining Services continue to research the feasibility and affordability of composting in order to expand to all other dining facilities in the coming years.
