A brief description of the trayless dining program:
The University of Alberta Augustana Campus has run a trayless cafeteria for approximately 5 years ago. This program:
- Saves ½ a gallon of water for every tray that does not have to be cleaned;
- Reduces the amount of chemical cleaning agents needed, preventing chemicals from going down the drain;
- Reduces the amount of food waste produced by approximately 30%, because students tend to take only what they can eat, instead of overloading their trays.

100 per cent of the meals served at Augustana Campus are trayless. However, we are unable to estimate accurately how this translates into percentage of meal plan meals, conference meals, and so on served there. However, please note that Augustana Campus is responsible for approximately 10 per cent of institutional food procurement spending at the university, so this gives some indication of the scale of this program.
