O inventário da compra de alimentos e bebidas foi realizado com base na tabela existente na própria universidade no setor que opera com controle e fiscalização de contratos de alimentos e bebidas da Instituição.
A nutricionista do restaurante universitário foi questionada em relação a compras de hortifrutis e sobre certificação dos alimentos de forma sustentável.A nutricionista infromou que pelo menos 60% não tem certificação sustentável.
