A brief description of the pre-consumer food waste composting program:
Meat and vegetable trimmings are segregated and stored in a walk-in freezer weekly using a program titled "Trim Trax". Every Friday a local Pig-Farmer arrives at UMASS Medical School and picks up about 200 gallons of pre-consumer compost to use for feed on his farm. The Trim Trax program allows the Dining Services Department to track purchase ordering and waste trends to predict future purchases.
