A brief description of the sustainable food and beverage purchasing program:
Our standard for tracking local food is slightly different than the STARS standard. We track anything with the Kentucky Proud label, which includes items that are grown OR processed in the state. We then separate out, which has a direct farm impact (e.g., grown in KY). Using this standard makes the tracking process much easier for our dining management team, though it does eliminate some items we purchase from neighboring states that are within the STARS 250 mile standard. We started tracking in fall 2012, using the 2012-2013 as a pilot year. Using this information, we will develop a plan for increasing our local food purchases. All of our coffee products offered on campus are Fair Trade Certified.
