Duncan Dining Hall is where we feed the Corps of Cadets each week. It is designed for military style feeding on tight schedules. Because of this, we have to prepare food for 2200 cadets in advance of their 8 required meals per week. For dinner Monday through Thursday, all 2200 meals have to be pre-plated. If students are unable to show up or they decide to select another entree instead of the other, we have more food waste than a typical dining hall. Because of this, we freeze leftovers weekly and donate directly to Twin City Missions to reheat and serve in their kitches.
