Name of the institution’s featured sustainability program, initiative, or accomplishment:
SUNY Oswego Maple On Tap

A brief description of the institution’s featured program, initiative, or accomplishment:

Starting in the Spring of 2021, the Office of Sustainability partners with our campus dining provider, Auxiliary Services to tap sugar maple trees on campus, collect maple sap that is then boiled in one of our dining halls. The finished syrup is then featured in a weekend brunch for the campus and community members. This coming February will be the third year we have tapped sugar maples for syrup on the campus grounds. Founder Edward Austin Sheldon was a known horticulturist and once completing the construction of his home on campus, Shady Shores, his family continued to tap the sugar maples on the property for generations, until the property became the residence of SUNY Oswego's Presidents. Being able to return the history of our founder to the current campus activity has been an extremely rewarding experience and we are constantly thinking of new ways to expand and enrich this initiative.
