SUNY Oswego Maple On Tap

A brief description of the innovative policy, practice, program, or outcome that outlines how credit criteria are met and any positive measurable outcomes associated with the innovation:

In the Spring of 2021, the SUNY Oswego Office of Sustainability partnered with our campus dining provider, Auxillary Services to tap sugar maple trees on campus to collect maple sap that we boiled in one of our dining halls. Syrup boiled was then served the weekend of the boil to the campus for Saturday brunch. This coming February will be the third year we have tapped sugar maples for syrup on the campus grounds. Founder Edward Austin Sheldon was a known horticulturist and once completing the construction of his home on campus, his family continued to tap the sugar maples on the prop[ery for decades. Being able to return the history of our founder to the current campus activity has been an extremely rewarding experience and we are constantly thinking of new ways to expand and enrich this initiative.
