Title or keywords related to the innovative policy, practice, program, or outcome:
Meatless Monday

A brief description of the innovative policy, practice, program, or outcome:

The Southwestern University Student Council passed legislation that would make our only dining hall serve a meatless entree on the main line on Mondays.

A brief description of any positive measurable outcomes associated with the innovation (if not reported above):

Meat has a huge environmental impact compared to non-meat diet.
It also has made vegetarianism more feasible and desirable on campus.
100s of schools have already done this but it is still a minority among IHEs so we qualified it as an "uncommon policy."
