A brief description of the sustainable food and beverage purchasing program:
The food services on campus include an espresso bar, a cafeteria, and the Seattle Culinary Academy (SCA). All three are included in the scope of this report. The espresso bar and cafeteria only report 1% of food items as sustainable and this is the fair trade coffee that is offered. More products may be sustainable, but they are not identified by the purchasing department and are not labeled as such for students.
The SCA has won many awards for its sustainable practices and it accounts for the lion's share of sustainable food purchases. It sources local farm foods when possible and strives for organic and other sustainable certifications when local purchases are not made.
