A brief description of the pre-consumer food waste composting program:
One of Rice's six kitchens participates in what we call a farm-to-fork-to-farm program, wherein food is purchased from a local farmer who when making his deliveries collects pre-consumer food waste from that kitchen to take back to his farm to make compost.
Also, a minimal amount of pre-consumer food waste is used as compost for our small community gardens, however, it is not a significant quantity.
