All food and beverage purchase invoices were collected from both the Notre Dame Campus Food Services as well as from the Paterson GlobalFoods Institute which operates a public food court and a restaurant as part of the Hospitality and Culinary Arts programs. The itemized invoices were entered in Excel and purchases were categorized according to the plant-based and sustainably or ethically produced categies.
The timeframe used was the 2019/20 fiscal year (April to March). This was the last year of full, uninterrupted food services at the College.
