Dining Services is contracted with Sodexo. Part of the contract includes the following:
"To the extent feasible the Operator shall purchase and promote Oregon and West Coast grown food products. Food products grown in Oregon and the West Coast may include those from the fruit, vegetable, nut, poultry, cattle, peanut, soybean, swine and aquaculture industries. Promotion must include labels that specifically indicate that the food item was produced on the West Coast as part of an integrated University/Operator effort to reduce carbon emissions."
and "The Operator is to make a good faith effort to secure locally grown/processed food items whenever it is economically feasible or there is mutual agreement that it is environmentally prudent to do so."
Because this is the first year of the Sodexo contract, no food expenditure data is available.
