A brief description of the sustainability-focused immersive program(s) offered by the institution:
NIU offers a course called ENVS 201 Introduction to Sustainable Food Systems that is an immersive, 16 week long experience. Students in this class run our campus community garden; they work in the garden doing planting, weeding, and harvesting, they learn how to apply principles of sustainable food systems to thinking about managing community garden programs and small farms. They also spend the semester touring different types of sustainable food systems (farms, food banks, etc) in the northern Illinois region.
