A brief description of the sustainable food and beverage purchasing program:
Most of what we buy is served on the salad bar, wraps and sandwiches. We try to buy local greens such as lettuces, chard and kale. We also buy potatoes, turnips, beets and root veggies from Washington as well when we can. We buy Washington apples and grapes too. We serve quite a bit of beef beef and lamb products from this state too. The lion's share of these points come from our coffee purchases. We source Fair Trade Coffee from Pura Vida and also just started purchasing a local food share for the college to introduce and educate about the benefits of supporting local farms.
