With the help of NC State Dining, an annual expenditures inventory was exported to complete an analysis of sustainably/ethically produced and plant-based foods. To determine sustainably/ethically produced food, research was completed to match items in the expenditures inventory with the eligible certifications provided by STARS. For the plant-based section of this credit, items from the expenditures inventory that did not meet the plant-based criteria provided by STARS were removed.
