Climate Justice - In partnership with with the Northeast Iowa Peace and Justice Center, Luther offered a course on climate justice during the summer and fall of 2021.
The Grid - In partnership with the Winneshiek Energy District, Luther offered a course on the future of electricity in the US with a focus on the book, The Grid.
Sustainable Cooking Classes: Throughout the course of the year, Luther offers a wide range of food education classes to members of the campus community. These events are meant to provide a time and space for faculty and staff from different parts of campus to spend time together while learning to cook with local and seasonally available foods. All participants of the CSA Rebate Program are required to participate in two opportunities over the course of the summer. A complete list of courses is available on this website: https://www.luther.edu/sustainability/food/classes/. For the purposes of reporting, we are counting this series as one continuing education course.
Foraging Wild Foods - In partnership with The Wilders Way, Luther offered a course on foraging for local foods in Northeast Iowa.
Farm to School Parent Education: Through the Northeast Iowa Food & Fitness Initiative, Luther College has conducted dozens of continuing education opportunities with a focus on parents of young children. The focus is on cooking, gardening, shopping sustainably and outdoor play. More details of these classes can be found in the Additional Documentation section below. For the purposes of reporting, we are counting this series as one continuing education course.
