AASHE conference 2016. Presentation Title: REAL FOOD, REAL COMMUNITIES, REAL IMPACT As anchor institutions, colleges and universities have a responsibility to the ecosystems, economies, and communities they touch. Through the Real Food Campus Commitment and Real Food Calculator, Johns Hopkins University and Lehigh University are working to ensure that the impact of campus dining is positive, inclusive of and accountable to their cities and foodsheds. In partnership with the Real Food Challenge, JHU and Lehigh join hundreds of campuses nationwide in shifting university food spending away from industrial farms and junk food and toward a healthy food system that strengthens local economies, respects human rights, ensures ecological sustainability and facilitates community involvement and education. JHU, with an institutional commitment to 35% “real food” by 2020 has pioneered revolutionary product shifts in the dining hall. Lehigh has seen a dramatic jump from 2% “real food” to 11% in one year by creating relationships with local farms and vendors, dropping companies with OSHA and NLRB violations, and investing in campus data quality. By engaging directly in dining operations and decision making, and shaping campus food policy, students involved with RFC and leading these processes are positioned to become the food movement and sustainability leaders of the future. Lehigh University is a member of the Lehigh Valley Association of Independent Colleges (LVAIC). Our activities, focused on our strategic priorities of professional excellence, programmatic sharing and synergy, and operating efficiencies, provide expanded and enhanced opportunities for faculty, staff, and students and free resources to support campus-specific programs. Among the many LVAIC activities, Lehigh University has also hosted the "LVAIC Campus Sustainability Conference 2016". The purpose of the conference was to explore sustainability projects, cultivate dialogue and shared learning and encourage concrete action promoting responsible stewardship of the natural environment and equitable community in the areas where we live and work.
