A brief description of the post-consumer food waste composting program:
Lakeland composts post-consumer food items that remain from the hot cooked food service line and the daily and weekly leftover items from the salad bar. Catering staff dispose of products that are returned from catered events on campus to the compost bins in the kitchen. Leftovers from meeting setups are separated. We also move the bins to the dish washing area when we cater dinner events. The waste scraps from plates are disposed of in the bins. Our next effort would be to include the students in the composting process by expanding the collection bins into the service area. This would involve a change to our purchasing procedures (all paper carry-out and eliminate all foam containers) and education of the students and staff on the process.
