In 2018, Knox College was the third US College to stop using plastic straws when it switched to paper straws in all of its campus dining areas.

Knox's food organics recovery efforts were recognized by winning first place in RecylceMania's Food Organics category two years in a row (2018 & 2019). From Knox's Chapter of the Food Recovery Network (FRN) to Knox Farm's composting program, Knox is working hard at food organics reduction and recovery. In addition to the thousands of pounds that FRN recovers and donates to local organizations, each term they host a "weigh the waste" awareness campaign. Knox's cafeteria and snack bar use compostable serving ware that is collected, along with food waste, for compost. Knox Farm composts farm waste on-site, closing the loop and converting waste into compost that is used for next year's harvest.
