Inventory conducted from total spent by Humber's main food service operator Chartwells and the student run culinary program (HRT) for the time period of April 2018 to May 2019. Chartwells staff filled out the inventory sheet, and for HRT, vendors provided velocity reports for the time frame and our team went through each product and determined whether they would be plant-based following NOVA's guide. Only products for which the sustainable certifications were known by the vendor were included in the sustainable/ethically produced list.
