Our director of dining services (Parkhurst Dining) used monthly spending in March and November 2022 to estimate the percentage of plant-based food expenditures for the entire year. The spreadsheet is purchasing on plant-based food items for March and November 2022.

We were unable to determine the percentage of purchasing that are certified as sustainable. Using March and November 2022 total purchasing, and multiplying by 6 gives the estimate of total US dollars of food and beverage spending above.
