There is a stand-alone vegan station that is staffed to provide vegan options of all patrons. It has a four week menu cycle and the offerings are changed daily.

Dining Services seeks out locally produced meats whenever possible. One of the primary challenges are finding local producers who can provide the volume needed. Cost can become an issue to the the high cost of production for small farmers.
