We contacted the Head Chef of the Kitchen Staff at Franklin University Switzerland to send us data on the food purchasing inventory and a detailed list of where the food items come from (Brand and Location). The data we have collected represents food purchased in fall 2023. However, there is not much variation per year or season.
Description of the methodology used to determine the spend on plant-based foods:
We asked the Head Chef, who is in charge of purchasing the food, what percentage of his budget he spends on plant-based foods (estimated).
