The University's contracted food service (Cafe Alere) was asked to  provide their food and beverage spending inventory from 2023. Each food item was individually analysed and cross-referenced by the sustainability team to identify if it met the sustainably or ethically produced criteria outlined by the STARS 3.0 Qualifying Food and Beverage Certifications and Programs list. Alcoholic beverages were excluded from the analysis.


Description of the methodology used to determine the spend on plant-based foods:

The University's contracted food service (Cafe Alere) analysed their 2023 food spending inventory to identify all plant-based food items. Following that, each food item was then catagorised into fresh produce, whole grains, culinary ingredients derived from plants, coffee and tea, plant-based/vegan alternatives to meat and dairy, and processed fruits, vegetables and legumes to calculate the percentage of total spend.
