A brief description of the methodology used to conduct the inventory, including the timeframe and how representative samples accounted for seasonal variation (if applicable):
Elon Dining Services uses a combination of purchasing tracking software and weekly self-reporting to log 3rd party certified and plant-based purchases. All invoices are tracked and denoted based on STARS criteria. This allows the percentage of sustainable products to be calculated. The total cost of the invoice is entered into the spreadsheet which figures into the calculation of overall percentage of sustainable products purchased. The reported data represents May 31, 2020 - May 31, 2021.
