A brief description of the sustainable food and beverage purchasing program:
When produce is in season and available, almost 60 percent is purchased from local farmers. The main foods purchased locally include apples, honey, and vegetables. Dried foods however, such as rice and pasta, come from a broad line distributor.
Much of the dairy comes from the Shenandoah Valley and is processed less than 200 miles away.
