Vegan dining – Sodexo always has a vegan option and tries to incorporate as many vegan choices as possible. A review of the menus shows that 45 % to 50% of the meal choices are vegan.

Signage to support sustainable food options is posted in dining halls. Sodexo does outreach across the semesters to talk to students about food choices. They also promote their green box program that encourages dining hall users to use the reusable takeout containers they provide.
Part 2. Food waste minimization and recovery

The Sodexo operation at the Steamboat Springs campus has implemented Weigh the Waste events (at least annually; food waste education events co-hosted with the student Sustainability Club) and Waste Watch Powered by Leanpath (a kitchen food waste tracking and reduction program). The Spring Valley campus also participates in Weigh the Waste events.

All three dining halls (Steamboat Springs, Leadville, and Spring Valley) use a trayless dining program.

The Steamboat Springs campus is a registered participant in the Food Recovery Network which is student led. For this program, students weigh leftover dining hall food that has been frozen by Sodexo, record the weights in the Food Recovery Network national database, and deliver the food to Lift-Up, the local food bank.
