Our staff retrieved purchasing information from OpenFields reporting for October 1, 2018 - September 30, 2019. This represents a full fiscal year prior to COVID-19 for a representative sample of campus dining operations. OpenFields provided an itemized plant-based expenditure list along with a sustainably/ethically produced expenditure list. Each was divided by the total food and beverage cost for the same time frame to provide the requested percentages. These figures are representative of all dining operations, including c-stores and national brands, on campus.
