Carleton's 2021 Food and Beverage Inventory includes all purchases from Aramark-operated dining locations from January 2021-December 2021. This Inventory is a combination of velocity reports and purchasing assessments produced on-site to accurately reflect purchases from local vendors not present in velocity reports. On-site purchasing reports assess food and beverage purchases for the dining hall on a monthly basis. These monthly assessments measure local purchases (produced or processed with 400 km), community-based purchases (produced or processed with 75 km), and third-party certified purchases (Faitrade, MSC, and Organic).

A brief description of the institution’s sustainable food and beverage purchasing program:

Carleton University Dining Services is dedicated to measuring, reporting, and increasing their sustainable purchases with each new semester's menu offerings. Dining services works closely with the office of sustainability on relevant initiatives that would benefit the whole campus community.

As a Fairtrade Designated Campus, Carleton is committed to offering all Fairtrade Certified tea and coffee wherever these products are served. In addition to tea and coffee, Dining Services is consistently increasing its utilization of Fairtrade Certified products in baked goods.

Dining Services has committed to purchasing MSC Certified seafood products in the dining hall if an adequate MSC Certified option of the product exists. As of January 2022, all seafood dishes in the dining hall's cycle menu are MSC Certified.

Dining Services is committed to introducing at least two new local SME suppliers each year in the dining hall's cycle menu offerings.

Dining Services has begun crop planning with local farmers over the winter to more proactively plan local produce purchasing.
