The inventory was determined by looking at the monthly expenditure by vendor. The Real Food Challenge was performed for all vendors operating through university dining services for the months of June, August, and October. Due to internal issues within the Real Food Challenge organization, only the 'Fair', 'Ecological', and 'Humane' categories were examined.

When this category was originally being pursued, we were using the "Real Food Challenge" framework. The summer before submitting this report, the Real Food team announced their dissolution, which meant we would not be able to have our findings verified by their organization. This is why the information provided here resembles the framework of the Real Food Challenge but has been slightly adapted to satisfy STARS criteria.
