To conduct the food and beverage purchasing inventory, the dining services provided was asked to provide copies of invoices from September 2021 and April 2022 for their two major suppliers (Berry Man and Sysco), to represent two seasonally-diverse samples of dining purchases. The invoices were reviewed, item by item, to identify which items are plant-based and which are certified/verified as a sustainable product. The totals were tracked in the STARS Food and Beverage Purchasing Inventory sheet included in this report.
