CI's Dining Services provided invoices for purchases made in April and October of 2019, as a representative sample of food and beverage purchasing. Sustainability staff analyzed the invoices to identify qualified products based on the STARS Food and Beverage Purchasing categories. All plant-based and sustainably or ethically produced foods were categorized and consolidated into the STARS Food and Beverage Purchasing Inventory template.

CI's Dining Services is actively working to increase sustainable food and beverage purchasing. Starting this year, nearly all coffee purchased is certified by Rainforest Alliance, much of the fish purchased meets Monterey Bay Aquarium Seafood Watch standards and 60% of produce is purchased within 250 miles of campus.
