Yes

Almost all Gastronomy courses deal with issues of sustainable food systems. This is one of the most hotly debated and discussed topics in the field.


Are students educated in dining facilities about how to make eco-positive food choices?:
Yes

Provide a brief description:

Students are educated on how to make positive food choices through a myriad of programming and marketing.

"Make a Difference Monday" is a day each week when all residential dining halls serve foods with a lower carbon footprint. It's also an opportunity for education through station signs that discuss what makes each meal sustainable, posters, website and Facebook postings, and table tents. No beef or pork are served on these days and the focus is on local, sustainable produce, seafood and poultry. Throughout the rest of the year, maps with farms of local produce are posted.


Are students educated during orientation about how to make eco-positive food choices?:
Yes

Students are made aware of our sustainability program during Orientation, part of which is our Dining Services program.

Yes

The Metropolitan College has many guest speaker events outside of the classroom. Topics include sustainable food systems. In addition, BU Dining Services and the Vegetarian society also host events and speaker series that focus on eco-positive food choices. These include a week of activity for Earth Day, our Sustainability Day in the Fall, a university-sponsored farmers' market, CSA, and various field trips to local farms and producers.

Yes

The Organic Gardening Club has a green house on the top of the College of Arts and Sciences and Gastronomy students have an a plot in the Fenway Victory Gardens.
