A brief description of the sustainable food and beverage purchasing program:
Boston University buys locally to reduce fuel use and greenhouse gas emissions. Dining Services purchases locally-grown and locally-processed food from 45 farms and 130 different producers of everything from milk, fruit, vegetables, to seafood, tofu and bread. Locally-grown and/or organic processed purchases in calendar year 2012 accounted for 31% of our total food budget.
