Almost all Gastronomy courses deal with issues of sustainable food systems. This is on of the most hotly debated and discussed topics in the field.

Students are educated on how to make positive food choices through a myriad of programming and marketing. "Make a Difference Monday" is held once a month across campus as a special meal that promotes diets with a low carbon footprint. Through this premise, we promote local, organic, sustainable seafood, Fair Trade and other third party certified foods. We also promote eating less meat. Events and promotions throughout the school year are intended to bring students closer to their food source, especially through effective signage, social media and tabling in the dining halls.

Students are made aware of our sustainability program during Orientation, part of which is our Dining Services program.

The Metropolitan College has many guest speaker events outside of the classroom. Topics include sustainable food systems. In addition, BU Dining Services and the Vegetarian society also host events and speaker series that focus on eco-positive food choices. These include a week of activity for Earth Day, our Sustainability Day in the Fall, a university-sponsored farmers' market, CSA, and various field trips to local farms and producers.

During the Summer 1 session of 2011, the Gastronomy department offered an Urban Agriculture Course. There is also an Organic Gardening Club on campus.
