8.1 Food recovery program

Does the institution donate surplus food to a food redistribution program on at least a monthly basis when its dining services are operational?:
Yes

Before long break closures, perishable items are donated to the Boise Rescue Mission and Food Recovery Network.


Do the institution’s dining services divert pre-consumer food waste from disposal for processing and use as animal feed, compost, and/or biofuel?:
Yes

Narrative and/or website URL providing an overview of the institution’s pre-consumer food waste diversion program:

Our dining halls have partnered with a local pig farmer to donate food waste.  Approximately 70 gallons of pre-consumer waste was donated to the pig farmer on a weekly basis for academic years 22/23 and 23/24.  This donation program has ended due to the challenges of storing food scraps until they could be picked up by a farmer.

Yes

Narrative and/or website URL providing an overview of the institution’s food and organic materials management tracking and assessment initiatives:

Boise State's food service provider is focused on reducing food waste in the two dining halls on campus.  A waste tracking platform, Waste Not, is used to track food waste daily from both dining halls.  One dining hall, Buster's Kitchen, tracks all waste including plate waste.  Types of waste tracked include plate waste, overproduction, trim, bones and shells, food safety, poor quality, odds and ends, and whoops.  The second dining hall, Sawtooth, is not set up to weigh plate waste but is able to track all other categories of food waste.   More information can be found on the following website:
