An inventory of food and beverage purchases that qualify as sustainably/ethically produced:
A brief description of the methodology used to conduct the inventory, including the timeframe and how representative samples accounted for seasonal variation (if applicable):
Bentley's Office of Sustainability has been working with Sodexo to obtain information related to food/beverage purchases.
The 2020 inventory contains information from 2 months: January 27-February 29, 2019 and August 27-September 30, 2019. These months were chosen to be representative of purchases made typically during the fall and spring seasons of the academic year. The data from these months reflect seasonal variation and availability of products, particularly fruits and vegetables purchased from Baldor Produce. The data includes all food and beverage purchases from all dining establishments on Bentley’s campus, including the Student Center, LaCava, and Currito’s. Bentley’s Office of Sustainability team then went through all of the data, categorizing it as Certified/Verified, Institutionally Affirmed, or Plant-Based, if applicable.
