A brief description of the pre-consumer food waste composting program:
Pre-consumer scraps are being collected from one of our all-you-care-to-eat locations. The new program is student-led and involves collection of kitchen produce scraps from the dining location to a university-owned farm plot to be composted and, according to the intent of the program, eventually used in a student-led farm-to-table produce operation.
