Farm to Dining Hall Program
A brief description of the innovative policy, practice, program, or outcome that outlines how credit criteria are met and any positive measurable outcomes associated with the innovation:
We have a great relationship between our campus farm and the dining program, which allows Book & Plow farm to provide 2.5 - 3.5 percent of total sales to the dining program in peak growing months October and November). Our own research on other campus farms leads us to believe that this is a significant amount compared to our peers. A few factors have let to this including a self-operated dining program, a farm-in-resident program that allowed us to scale this size of our farm quickly, and an associated economics approach to the farm/dining relationship which allows us to optimize our planning to meet the needs of the dining facility.
